Apple Cordial
Ingredients
4 apples (your choice, I used granny smiths)
Tbsp ground cinnamon, or 4 cinnamon sticks
½ cup sugar
4 cups water
2 limes
Directions
Dice apples, removing stems and seeds if you prefer. Put apples in a saucepan with 3 cups of water, or enough that the apples are all covered. Bring to a boil and let simmer 5 minutes. Add cinnamon and sugar. Cut limes in half and squeeze juice onto apples. Let simmer another ten minutes. When apples are frothy, use spatula to squish them down to really get the juice out of them. Take off heat. Set a strainer over a glass or metal bowl, and strain apples. Let sit for 10 or so minutes. Optionally, press down to get the maximum amount of liquid from mixture. Add another cup of water to dilute the cordial, then serve!
