AW YEAH POTATO SALAD FOR DINNER

potato salad recipe, since it’s a little bit unusual: 

hard boil eggs and cool them. 

 boil waxy potatoes until firm but not so firm they’re crunchy. 

 cut them while they’re hot and leave the skins on. 

 while still hot, put vinaigrette (greek is best) over the potatoes. You can let them cool after this step.  

celery and red onion to taste. 

add ham to taste if you’re making this as a meal and not as a side. 

add mayo. 

 chop the eggs and toss them in last, since they’re fragile.

 this results in a nice, flavorful, but not too oily potato salad!
